Every once in a while I get a craving for something I just don’t have on hand. Sometimes it’s sweets like chocolate or hazelnut spread. Mmm, don’t even get me started on hazelnut spread. I really try not to have THAT in the house because it’s just like crack to me. Once I start, I can NOT stop. Anyways.
Usually though, it’s salty foods. Today it was nachos. Ooey gooey cheesy spicy nachos. Well upon examining the pantry, it was clear that there were no tortilla chips to be found. Yes, yes, of course I could have gotten into my car and driven my happy self to the store for some tortilla chips. But you know what happens when I do that? I buy stuff I don’t need. And depending on how hungry I am, sometimes I buy LOTS of stuff I don’t need. Plus, it’s my day off, I’m being a bum, and I just don’t want to. So there.
What I did find in the pantry was a nice big package of white corn tortilla shells. I stood there and stared at those tortilla shells for a minute, and decided to try an experiment. Tortilla chips are just fried tortilla shells right?
Here’s What I Did
I cut the shells into six pieces, making a chip-like shape. These were smaller tortilla shells, approximately six inches in diameter. So the resulting triangle was
really nice and bite-sized.
Then I sprayed a cookie sheet with butter flavored cooking spray, and arranged my little triangle treats at tightly as I could without overlapping them. (No, I’m not going to fry them. I am just not in the mood to get my kitchen greasy with popping oil all over the place.) Then I sprayed another light layer of cooking spray over them. I topped liberally with salt, and a smidge of chili powder.
I popped the chip-filled trays into the oven at 350 degrees. They baked nicely there for about twelve to fourteen minutes, untill they were super crispy and yummy!
Once I had these amazing crunchy chips ready, I was then able to make my nachos! I added seasoned shredded chicken, cheese, and my homemade pickled jalepenos. Toss the mix back in the oven for a few minutes and POOF! Nachos to make a restaurant jealous! And just in case you were wondering, yes. That is exactly what I had for dinner tonight. Sometimes a girl’s just gotta do what a girl’s gotta do.
